Mother's Day Muffins: Coconut & Plum

Mother's Day to me is another opportunity to show my incredible Mum how important she is and how much I appreciate her. Telling someone you love them doesn't have to cost a bomb, in fact it doesn't have to cost anything at all if you don't want it to. Doing something thoughtful for the people that matter most to us is a much better use of our time than spending hours wandering around the shops. You could clean their house or tidy their yard, organise your Mum's closet, watch their favourite show with them, cook them a nice dinner, have a home made spa day (body scrub recipe here>) or bake them these delicious Coconut and Plum Muffins!
They are super easy to make, leave your house smelling like a boulangerie and most importantly will make your Mum feel so special because you took time out of your busy life to make something just for her. I have iced these babies because Pretty. But you could just serve them with a little icing sugar dusted over the top if your mum is like mine and doesn't like things too sweet.

Ingredients

1/2 cup of Nuttelex or other dairy free butter substitute
1/2 cup caster sugar
1 cup nut milk + 2 Tbsp
2 eggs lightly beaten
1 1/2 cups self raising flour
1/2 tsp baking powder
1 cup desiccated coconut
1/2 cup of canned plums in syrup diced (I used my Dad's home made canned plums but the store bought version will work just fine)
1 tsp vanilla essence

*this recipe is dairy free but you could definitely substitue the Nuttalex and nut milk with dairy butter and milk. It might mean you need to add even more milk to get the right consistency for the batter.

Method


  1. Pre-heat oven to 180°C
  2. Cream 'butter' and sugar until well combined, add 2 Tbsp milk then gradually beat in eggs. Stir through vanilla essence.
  3. Stir flour, baking powder and coconut gently into butter mix. Mix in 1 cup milk, your mixture should look like a wet cake batter.. similar to a pancake batter.
  4. Fold through diced plums.
  5. Spoon into a greased muffin tin, filling each section to the top.
  6. Bake for 15 - 20 minutes or until the tops are golden and the muffins are springy to the touch. 
  7. Leave on a cooling rack to cool completely if icing with butter cream icing or simply dust with icing sugar and serve slightly warm.
  8. Make your Mum a cup of tea in a pretty tea cup and enjoy the warm fuzzies of knowing you've just made her feel as special as you already know she is.

Butter Cream Icing:

Ingredients

1/2 cup Nuttelex
1 cup soft icing sugar
1 Tbsp syrup that the plums were in
Red food dye
Shaved coconut

Method


  1. Beat sugar and butter until smooth and fluffy then stir through plum syrup and your desired amount of red food dye. 
  2. Spread onto muffins with a butter knife and decorate with shaved coconut.
note: if you plan to pipe the icing on like I have you will need to double the recipe.
